When I moved to Kitimat, this was one of the first places I visited because I wanted to see the ocean. Over the years, it has become one of my favorite places to visit. Across the water you can see Kitamaat Village, which is a 20 minute drive off of the highway. On the right is a tug service and just beyond that is the Marine Search and Rescue HQ.

It was a cloudy rainy night, and the nip of late fall was in the air. You can see some definition in the clouds.

Was driving to Prince Rupert for work recently, only a few clouds in the sky. I looked out my window and seen a gorgeous sunset in the horizon. There was a rest area just a few hundred metres away, so I stopped. I got out of my vehicle, set up my tripod and set my exposure. I used the remote on my phone for this one, I didn't want to disturb the camera as the shutter opened. Out popped this photo, and with a bit of editing, this came to be!

I love the hard contrast between the mountains and the sky. The orange and golden yellows in the middle fade into a creamy blue. As you get higher into the sky, the blue dark with wisps of clouds. All the colors reflecting off of the ocean ripples which are softened from the long shutter speed.

I made sure to capture this as the lowest ISO that I could, so I kept it at 100, and kept the shutter open for 15 seconds. I wanted to let as much light in while still getting a sharp image, so I felt f5.6 could accomplish this.

I've made fathead dough before, but used it for pizza. Today, I decided to make it into biscuits and use them as hamburger buns. The result was fantastic. I've had a few people ask me for the recipe, so here it is.

Fathead Dough Biscuits

Ingredients

  • 3 Cups Shredded Cheese (Mozzarella)
  • 1/4 Cup Cream Cheese
  • 1 Large Egg
  • 1.5 Cups Almond Flour

Instructions
Preheat oven to 450°F. Combine cheese and cream cheese in a medium sized saucepan and heat on medium, stirring constantly.

Once the cheese and cream cheese are fully melted and combined, remove from heat.

Into the sauce pan, add the almond flour and egg, mix thoroughly with a plastic* spoon

Using your greased hands, form the dough into 12 biscuit size circles and place onto a pan with parchment paper.

Place the pan into the oven and bake for about 10 - 12 minutes, removing once they are gold brown.

*Use plastic to prevent dough from sticking.

 

 

There are many ways to make fathead dough, and all of them seem to be pretty similar, this is just my take on it.
